Description

Headshot of Dan Giusti - a white ban with bald head and light beard in a green t shirtGrowing up in a food-loving Italian family, chef Dan Giusti always had a passion for food. This inspired him to attend the Culinary Institute of America in New York City. He quickly rose through the culinary ranks, serving as Executive Chef of 1789 in Washington, D.C. and Head Chef of Noma, long considered one of the finest restaurants in the world, in Copenhagen, Denmark. After three years at Noma, Dan returned to the United States to tackle another culinary challenge: school food.

A school lunch tray with roll, milk, apple, kale salad, and veggie lasagnaUnfortunately, many institutional foodservice programs lack the resources, culinary expertise, and support they need to thrive. In turn, hardworking staff members struggle to prepare meals within strict nutritional guidelines and budgets, diners are often dissatisfied, food gets wasted, and problems like hunger and diet-related illnesses persist. Guided by the belief that everyone deserves good food, Dan founded Brigaid in 2016 with a vision to assemble a team of professional chefs who were eager to apply their culinary expertise to help school foodservice programs achieve their goals. Today, Brigaid’s work spans school districts across the country, a senior organization, and a prison system.

Join the Virginia Museum of History & Culture and Dan Giusti to learn more about his journey from the pinnacle of the fine-dining world to the school cafeteria, as Brigaid works to reduce hunger, promote nutrition, and decrease diet-related illnesses across the landscape of institutional dining.
